Chicken Chili


  • Garlic infused olive oil
  • Onion infused olive oil
  • 4 boneless skinless chicken breast cubed
  • Large jalapeno pepper seeded and finely chopped (optional based on tolerance)
  • Ground coriander
  • Ground cumin
  • 2 cans 14.5 oz diced fire roasted tomatoes in juice
  • Lime
  • Frozen corn
  • salt and pepper to taste
  • Chopped fresh cilantro
  • Cheddar cheese
  • Crushed baked corn tortillas
